1 head cauliflower or 16 oz bag frozen cauliflower
2 tablespoons unsalted butter or olive oil
3 tablespoons keto-friendly ranch dressing
1/2 cup parmesan cheese
½ stick of butter
salt & pepper to taste
1 cup almond milk or heavy cream
Instructions
Rinse and cut cauliflower into florets. Boil cauliflower for 10 minutes or until the fork-tender and soft. Remove from heat and drain well.
Add ingredients except cream/almond milk into a mixing bowl, blending until smooth or mash with a masher. Add milk/cream for moisture and creaminess, as needed. Season with a dash of salt and pepper, to taste.
