When I heard that Chipotle’s cauliflower rice test that was previously only available in test markets was now being offered at all US and Canada locations, I was stoked!
Since converting to a low-carb way of eating, my visits to Chipotle decreased due to my now-limited food options. My go-to items on the menu were the queso and chips, and a chicken bowl with brown rice, grilled veggies, salsa, lettuce, and guacamole. After my conversion to the keto diet, that changed to a grilled chicken bowl with grilled veggies, guacamole, salsa, and lettuce. Still pretty good, but not as filling as my previous menu choice, which always ended up being at least two servings.
As soon as I heard about the cauliflower addition to the menu, I threw my sneakers on and ran (literally) to the restaurant. While my chicken bowl was being made, I noticed that the bin of cauliflower rice was nearly empty. They put a partial scoop into my bowl, much less than the regular portion for rice, but I thought it was because they were running low. It didn’t matter much because I knew that my bowl would be topped off with lots of other items. As usual, the food was delicious, however, I noticed a slightly different, yet familiar taste.
The following day, I returned to the restaurant to grab a fresh side of cauliflower rice to go. I planned to pair it with protein. Once again, the bin of cauliflower rice was low. I asked for regular serving size, and was pretty surprised by how scant the serving was. Apparently, the policy is to give guests one scoop, whether it fills the bowl or not.
The cauliflower rice itself didn’t mimic rice at all. It was overcooked and had a consistency so soft that it turned to mush without chewing. It took me a while to pinpoint it, but the flavor and texture reminded me of my grandmother’s rutabagas with a splash of lime juice. Consistency and all. It was a great throwback on my palate, but it just wasn’t rice-like.
I’ll have it again.
